One of my favorite, go-to
dinners. My family will attest that this is featured on the monthly menu at
least twice! Very simple, very nourishing, and a great way to use left-over
chicken.
Recipe
Romaine hearts, chopped – 2 heads
Fresh Mushrooms, sliced – 2 C
Tomatoes, wedge-sliced – 3 or 4
Chicken, chopped in 1 inch pieces – 2 to 3 C
Cucumber, sliced – 1
Avocado, chunked – 1
Roasted sunflower seeds – ½ C
Combine
salad ingredients. Top with my homemade ranch dressing recipe. Delicious!
