Tostadas are an easy to
prepare, attractive and delicious dish. This variation on tacos doesn't require
meat, but provides whole protein via the bean and corn combination.
To be extra healthy, you
can make your own refried beans, without added oil or butter. Simply cook beans
until soft, then puree in a food processor with a little water. Add salt and
garlic, and voila: homemade refried beans!
